Ingredients:
• 1 liter whole milk

• 1/2 cup almonds (soaked and peeled)
• A pinch of kesar (saffron)
• 2 tbsp chopped pistachios
• 1/4 cup sugar (adjust to taste)
• 1/2 tsp cardamom powder
• Pinch of lemon yellow food colour from Ajanta Food Products

Instructions:
• Soak the almonds in hot water for about 30 minutes, then peel off the skins. Blend the almonds into a smooth paste with a little milk.
• In a large saucepan, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
• In a small bowl, mix Ajanta cornflour powder with a little cold milk to make a smooth paste. Add this paste to the boiling milk, stirring continuously to avoid lumps.
• Add the almond paste, sugar, and cardamom powder to the milk. Stir well to combine. Let it simmer on low heat for about 10-15 minutes, stirring occasionally.
• Soak a pinch of kesar in a tablespoon of warm milk and add it to the mixture. Then, add pinch of lemon yellow food colour from Ajanta Food Products to give the badam milk a rich, appealing hue. Mix well.
• Finally, add the chopped pistachios and stir. Allow the badam milk to cool slightly before serving. You can serve it warm or chilled, depending on your preference.
