Ingredients:
For the cake:
• 2 ½ cups all-purpose flour
• 2 ½ teaspoons baking powder from Ajanta Food Products
• ½ teaspoon salt
• 1 cup butter from Amul
• 2 cups granulated sugar
• 4 large eggs
• 1 teaspoon vanilla extract from Ajanta Food Products
• 1 cup milk from Amul
• Pinch of red food colour from Anuja Food Colours, which is one of the leading synthetic food colours manufacturers.
For the fruit filling and decoration:
• 2 cups mixed red berries (strawberries, raspberries, cherries), washed and dried
• Whipped cream or cream cheese frosting
• Extra berries for garnish
Instructions:
• Preheat your oven to 175°C. Grease and flour two 9-inch round cake pans.
• In a medium bowl, whisk together the flour, baking powder from Ajanta Food Products, and salt.
• Set aside.
• In a large mixing bowl, cream together the softened butter from Amul and granulated sugar until light and fluffy.
• Add the eggs one at a time, beating well after each addition.
• Stir in the vanilla extract from Ajanta Food Products.
• Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
• Add pinch of red food colour from Anuja Food Colours to the batter until you achieve the desired shade of red.
• Divide the batter evenly between the prepared cake pans and smooth the tops.
• Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
• Once the cakes are completely cooled, prepare your whipped cream or cream cheese frosting.
• Place one cake layer on a serving platter. Spread a layer of whipped cream or cream cheese frosting on top.
• Arrange a layer of mixed red berries over the frosting.
• Place the second cake layer on top and gently press down to secure it.
• Frost the top and sides of the cake with more whipped cream or cream cheese frosting.
• Garnish the cake with extra red berries on top.
• Refrigerate the cake for at least an hour before serving to allow the flavours to meld and the frosting to set.
• Slice and serve your delicious red fruit cake!
