Temper size
A lot depends on how much space you have in your kitchen or chocolate workshop. Ideally, your temperer should be placed on a sturdy hard surface area (kitchen bench, table or freestanding cabinet).

The average size of a tempering machine can vary from 40 cm to 60 cm in depth and width. Temperers are also fairly heavy, the more chocolate you put in, the heavier they get.


Temper volume

A smaller table-top temperer will take about 500 grams of chocolate, while a larger one can take up to 5kg. Smaller tempering machines are sufficient for occasional chocolate work or chocolate hobby needs, but if you want to start small-scale chocolate production, you will need at least a 1-2 kg capacity.
