Instructions:
1. Thread 3 shrimp onto each skewer.
2. Combine coconut, lime zest, 1 tablespoon salt & pepper in a small bowl. Brush shrimp with egg whites and press into the coconut mixture until evenly coated. Transfer shrimp to the baking sheet and broil until golden brown. Don’t forget to flip them halfway through.

Honey Soy Salmon with Edamame
This is a 30-minute meal
- Cilantro
- Scallions
- Vegetable oil
- Grated ginger
- Salt & Pepper
- Skin-on salmon filet
- Lime juice
- Soy sauce
- Honey
- Cooked Edamame
Instructions
1. Chop cilantro leaves and scallion and then mix in 2 tsp of oil & ginger. Season with salt and pepper
2. Cut two 3 inch long slits in salmon skin. Even stuff the salmon with the seasoned herb mixture.
3. Stir together some lime juice, soy sauce, and honey. Place the salmon skin side up on the grill for 3-4 minutes until well marked. Turn the salmon and continue cooking it while brushing the top with the sauce mixture. Cook for another 3-4 minutes until cooked.
4. Sprinkle sesame seeds on top and serve with cooked edamame.
Lemon Garlic Shrimp and Grits
This is a 15-minute meal
- Instant grits
- Parm cheese
- Unsalted butter
- Peeled medium shrimp
- Garlic
- Cayenne pepper
- Lemon
- Chopped parsley
Instructions
1. Bring 3 cups of water to boil in a saucepan, then whisk in grits. Add salt and pepper then reduce heat to medium-low. Cook and stir until thickened. Stir in parm and 1 tablespoon of butter.
2. Season shrimp with salt and pepper. Melt two tablespoons of butter in a large skillet. Add shrimp, garlic, and cayenne. Cook and toss in mixture until cooked. Remove from heat then add lemon juice and parsley.
3. Serve the shrimp on top of the grits in a shallow bowl. Add parsley for garnish.
