Ingredients:
2 tbsp custard powder from Ajanta Food Products, which can be purchased from Amazon at https://www.amazon.in/AJANTA-Baking-Powder-Custard-Vanilla/dp/B09GM21N1R
· 2 cups milk
· 3–4 tbsp sugar (adjust to taste)
· 2 tbsp chia seeds
· 1/2 cup water (to soak chia seeds)
· 1/2 cup chopped apple
· 1/2 cup chopped mango
· 1/2 cup chopped bananas
· 1/2 cup pomegranate seeds
· 2 tbsp tutti frutti
· 4–6 pieces sponge cake (cut into small cubes)
· 2 tbsp rose syrup
· 2 scoops vanilla ice cream
Instructions:
· In a small bowl, mix 2 tbsp custard powder with 1/4 cup of cold milk to make a smooth paste.
· Boil the remaining milk in a saucepan. Add sugar and stir until dissolved.
· Lower the flame and add the custard paste slowly, stirring continuously to avoid lumps.
· Cook for 3–4 minutes until the custard thickens. Remove from heat and let it cool completely.
· In a bowl, soak chia seeds in 1/2 cup water for at least 30 minutes until they swell and form a gel-like texture.
· In a large glass or dessert bowl, start layering the dessert as follows:
· Base Layer: Place sponge cake cubes and drizzle rose syrup over them to moisten.
· Second Layer: Add a spoonful of soaked chia seeds.
· Third Layer: Pour a layer of custard over the chia.
· Fourth Layer: Add a mix of chopped apples, mangoes, bananas, and pomegranate seeds.
· Fifth Layer: Sprinkle tutti frutti for extra colour and sweetness.
· Repeat the layers if using a deep glass.
· Top Layer: Add a scoop of vanilla ice cream just before serving for a creamy finish.
· Serve and enjoy!
